In developing settings such as China, factors including rural-urban migration, rising disposable income, and awareness of health and well-being reshape the public's demand for the availability, variety, quantity and quality of food. The rising middle-class consumers pay more and more attention to the authenticity, safety and health of food. Government and food producers increasingly recognize the importance of food safety and nutrition. Food consumption is related to the public health and the sustainable development of the society, and yet industrialization of the food system creates a “break” or “distance” between food production and consumption and compromises sustainability from the field to the table. Furthermore, with growing international food trade, a perspective of international cooperation should be introduced to promote food safety and sustainable development. Issues of food safety and sustainability need to be addressed through interdisciplinary thinking. We call for inclusive and comprehensive research perspectives considering different stakeholders (producers, middlemen, consumers) and multiple influencing factors (politics, economy, and environment) work on the global sustainable food system. The School of Tourism Management at Sun Yat-sen University will be hosting the International Conference on Interdisciplinary Food Studies: Transforming Landscapes of Food Consumption. We will invite scholars from universities in Asia, Europe, Africa, and South America to share emerging and innovative ideas, approaches and trends on the changing landscape of food consumption in the context of globalization and the rise of the middle class, aiming to promote food sustainability. We sincerely hope to establish a global research network through this exchange platform.
